Fiesta Chicken Bake

P6150553

This dish is in regular rotation here at our home.  It's one of those quick and easy meals, and I almost always have all the ingredients for it.

After you cook your chicken, shred it and put it in a bowl with:  1 can Cream of Celery soup, 1 can Cream of Chicken soup, 1 can Rotel, 1 tsp. cumin, 1 tsp. chile powder, and a small onion that has been sauteed in butter.  Mix all that together.

Then, crush up some tortilla chips.  (I just crunch them in the bag after I open one corner of the bag to let the air out.)  Spread a layer of the crushed chips into the bottom of a 9x 13 dish.  Then, spread you on a layer of the chicken mixture.  Follow with a layer of shredded cheese.  Repeat layers once.  Top it with the last of the chips and another sprinkling of cheese.  Bake at 350 degrees till hot and bubbly!

I make something similar called King Ranch Chicken, but this sounds lots easier and quicker!! Yummmmm!

Is this dish too spicy for Amelia? If not, why isn't there a picture of her eating it? She could at least hold the empty plate!!!!!

This looks sooo yummy!

Looks yummy!!! Unfortunatly I wouldn't be able to make it for my husband unless I left out the cream of celery, rotel, and onion!!! And that is what provides all the flavor! Ugh! He is so picky! :)

I think I will try that this week. I have some cooked frozen chicken.

Mmmmmm! That looks so good, I bet my boys will like it, I'll have to try it! You have a darling blog here! Thank you for visiting mine!

Hugs, Sharon

I make a recipe very similiar to this called Mexican Chicken. We love it!

I love your blog!

YUM!!! My hubby would looooove this recipe...thanks for sharing!

That looks wonderful! I am definatley going to try that recipe out on my circus.

I make something similar but with hamburger meat minus the celery soup & rotel. But your recipe sounds good. Your "about me" pic is too cute! xoxo, Joanna

This looks so yummy! My problem is that I have never heard of Rotel!!! What is it and where in the grocery store do you find it - and is it healthy???? I looks forward to knowing what this mystery ingredient is ....

Heather

Hi Katie! I'm so glad you stopped by my blog because otherwise I wouldn't have gotten to come over and read yours. First of all, you make me laugh, second that Amelia is a doll, and third I think I am going to learn some decorating tips from you. I LOVE your style! I will definitely be back to check on you. Your blanket comment on my blog today made me laugh because I have told my husband so many times "Don't touch the brown," (usually the blankets in hotels are brown). That cracked me up!

Mmmmmmmm...That sounds yummy and I know my hubby would love it. I'm going to have to give it a try.

I like your style! I have a southern man to keep happy and this recipe looks like a winner. I didn't know what Rotel was until I met him.

DELISH!!!! Thanks for sharing! I'm adding it to my recipes so I may add it to our "rotation"! HA!

Sounds YUMMY!
I stumbled across your blog through another and I've just got to tell you that you are such a sweet cutie!

Boy, doesn't that look delicious! I love just about anything with Rotel in it! Yum!

Yumm! Just added it to my recipe list.

Sadly, I got those little topiaries at a boutique long before I discovered Oops. :)

Yummmmmmmmmm!

This is just like my chicken enchilada recipe, minus the tortillas and adding in the chips! I think my boys will like this even better...how many chicken breasts do you suggest?

I found the Ro*tel in with the diced tomatoes, but the cans were covered with dust and almost expired, so they might not be popular in our neck of the woods! I'll have to look for them in another market! At least now I know what I'm looking for - I can't wait to try this recipe, but we've had company this week and they were allergic to tomatoes and cheese. Chicken was on sale last week, so I have about 10 pounds in the freezer.

We just finished eating this delicious Fiesta Bake and it is scrumptious! Thanks so much for posting the recipe.

Hi!! I am here via Leigh at Tales from Bloggeritaville.

This look delicious! I will have to try it soon.

Your daughter is adorable.

Nice to "meet" you!

I made this tonight for my mom, grandma, husband and sweet friend. Everyone loved it! It was funny! I kept running back to my computer to look at your blog! I served a salad, Mexican rice and broccoli cornbread with it! Delicious! Love your blog!
