Fiesta Chicken Bake
This dish is in regular rotation here at our home. It's one of those quick and easy meals, and I almost always have all the ingredients for it.
After you cook your chicken, shred it and put it in a bowl with: 1 can Cream of Celery soup, 1 can Cream of Chicken soup, 1 can Rotel, 1 tsp. cumin, 1 tsp. chile powder, and a small onion that has been sauteed in butter. Mix all that together.
Then, crush up some tortilla chips. (I just crunch them in the bag after I open one corner of the bag to let the air out.) Spread a layer of the crushed chips into the bottom of a 9x 13 dish. Then, spread you on a layer of the chicken mixture. Follow with a layer of shredded cheese. Repeat layers once. Top it with the last of the chips and another sprinkling of cheese. Bake at 350 degrees till hot and bubbly!
Grab a fork, and y'all come eat!





I make something similar called King Ranch Chicken, but this sounds lots easier and quicker!! Yummmmm!

Looks yummy!!! Unfortunatly I wouldn't be able to make it for my husband unless I left out the cream of celery, rotel, and onion!!! And that is what provides all the flavor! Ugh! He is so picky! :)

This looks so yummy! My problem is that I have never heard of Rotel!!! What is it and where in the grocery store do you find it - and is it healthy???? I looks forward to knowing what this mystery ingredient is ....

This is just like my chicken enchilada recipe, minus the tortillas and adding in the chips! I think my boys will like this even better...how many chicken breasts do you suggest?

I found the Ro*tel in with the diced tomatoes, but the cans were covered with dust and almost expired, so they might not be popular in our neck of the woods! I'll have to look for them in another market! At least now I know what I'm looking for - I can't wait to try this recipe, but we've had company this week and they were allergic to tomatoes and cheese. Chicken was on sale last week, so I have about 10 pounds in the freezer.
